Our 30th episode! Hard to believe we started in March, 2019 at episode 1! In this episode of Food History Happy Hour, we made the Pink Garter cocktail from 1946 and discussed all things wedding food! We started off with WWII rationing and wedding cakes, moved into 19th century wedding breakfasts, why they were called "breakfasts," and the types of food served, including the Medieval origins of wedding cakes, which were originally (and sometimes still are) fruitcake! Then we moved onto trends in cake design, the influence of Queen Victoria on fashionable weddings, and launched into a discussion of famous literary weddings (including Laura Ingalls Wilder and Meg March from Little Women) which then devolved into an (attempted) discussion of what was served at Miss Havisham's wedding breakfast.
In earnest pursuit of Anna Katherine's request to know what was at Miss Havisham's wedding breakfast, I could find no official reference. The original text only refers to the bride's cake and an epergne filled with something cobwebby and rotting. Almost certainly fruit if, like Elizabeth theorized, Miss Havisham's wedding had taken place in the 1810s.
I did, however, find an etiquette book from 1834 that had this to say about weddings: "The breakfast should be supplied by a first rate confectioner and the table should be as beautiful as flowers plate glass and china can make it. The ordinary menu of a wedding breakfast is as follows. Tea, coffee, wines, cold game and poultry, lobster salads, chicken and fish à la Mayonnaise, hams, tongues, potted meats, game pies, savory jellies, Italian creams, ices, and cold sweets of every description." So lots of meat, seafood, and sweets, all served cold. I can only imagine what rotting lobster or fish smelled like in Miss Havisham's house. Yuck. And while I wasn't able to find an actual menu from Queen Victoria and Prince Albert's wedding, I did find a clip from the show Anna Katherine was referring to! The Pink Garter (1946)
Tonight's cocktail came from perennial favorite The Roving Bartender by Bill Kelly, published in 1946. This was a very straightforward, very delicious drink. Super simple, but surprisingly complex-tasting. If you like raspberry lemonade, this drink will be right up your alley. If sweet drinks are not your thing, cut down on the grenadine, or up the gin ratio. It calls for:
1/3 ounce lemon juice 1/3 ounce grenadine 1 ounce dry gin Shake with ice and strain into a martini glass. I garnished mine with a maraschino cherry for extra pizazz. Still looking for more wedding food history? You can watch my illustrated talk as recorded recently for a library lecture!

We get to visit Disney in World War II again this week! In this charming little film, "Out of the Frying Pan, Into the Firing Line," first released in July of 1942, we see familiar characters Minnie Mouse and Pluto learning about the role of kitchen fats in munitions manufacturing.
The little films opens with Minnie frying up a pound of bacon on the stove, and then offering to pour the hot grease over Pluto's bowl of dog biscuits, much to his delight. But an authoritative voice from over the radio interrupts, telling of the value of saving kitchen fats for use in the manufacture of glycerin, a primary ingredient in explosives.
Although Pluto starts out angry at being denied the delicious bacon grease, a reminder that waste fats give soldiers more ammunition, with a quick pan over to the photo of Mickey Mouse in his soldier's uniform, convinces him otherwise. A quick salute to Mickey and Pluto is ready to help Minnie save the fats. He even brings the can of fat to the butcher in exchange for a string of hot dogs. This adorable little film, which was likely geared towards children as well as adults, helped convince Americans to alter their usual behaviors in the home and contribute to the war effort by saving every scrape of waste fats possible. Last week we talked about the High Cost of Living in the First World War. Those memories were close at hand during the Second World War. During World War I, the federal government did little to control prices at the consumer level, and rationing was voluntary. The U.S. Food Administration did control whether or not retail establishments and manufacturers complied with rationing and other rules through a complicated system of licensing and oversight, but individual consumers were technically allowed to make their own food choices. During World War II, things were different. Rationing was mandatory, even if the stamps were often confusing, and black markets definitely existed. But the creation of the Office of Price Administration froze the official prices of a whole host of goods, including food, to try to offset wartime inflation. Once again retailers were being regulated by the government, but this time the OPA relied on consumers to help report violators. By enlisting housewives to help enforce "ceiling prices" by refusing to purchase goods at that exceeded the published price lists, the OPA got a free labor source, and the housewives ensured that their retailers were not cheating them. Black women, in particular, benefitted from this practice, as discrimination meant they were subject to being cheated. "Here's a war job all America may be proud of. The rise in wartime cost of living today is less than half the World War I increase... only the patriotic cooperation of the public and businessmen with the government's price control program made this record possible... let's keep up the good work by keeping the Home Front Pledge: "I pay no more than ceiling prices... I pay my ration points in full."" Office of Price Administration, National Archives. This pair of posters, comparing the inflation of food from WWI to WWII, was designed to prove the effectiveness of the Office of Price Administration and its price control efforts. In the first one, Uncle Sam points to a chart that compares the rise of inflation over the course of both World Wars. In the second, two bar charts on inflation are compared. In the first, labeled 1918, a (suspiciously-1930s-attired) housewife tries and fails to reach a basket of food labeled "Cost of Living" as it rises on a bar chart of 64.6% inflation. Whereas the 1944 housewife can easily reach her basket at 25.9% inflation. Interestingly, her bar chart has a white line 3/4 of the way up which reads "Price control began here." The black bar below reads "Before Price Control," implying that inflation could have been much worse without the intervention of the OPA. Both statistics are attributed to the 53rd month of the war, which seems to indicate that the inflation statistics for World War I start in 1914, not 1917, when the U.S. officially joined the war, which tracks with the cost of living increases that began long before April 7, 1917. These two posters indicate just one of the ways in which the lessons of the First World War were applied to the Second. Some lessons, however, remained hard to swallow. During WWI, the United States Food Administration, although formed by executive order in May of 1917, received no funding from Congress until August, 1917, because a number of congressmen objected to the sweeping powers and controls it gave the executive branch. In an effort to avoid a bloated post-war bureaucracy, it was quickly dismantled in early 1919, despite the fact that the cost of living rose precipitously after the war. Similar sentiments about the power of the Office of Price Administration were debated during WWII, and numerous attempts by organized retail and manufacturing organizations to weaken it started as early as 1944. The OPA was allowed to temporarily expire in 1945, and prices jumped almost instantly. It was hastily reinstated, but in a weaker form, and was fully abolished in 1947. Some price control functions for sugar, rice, and a few other products were shifted to other agencies. In her article, "'How About Some Meat?': The Office of Price Administration, Consumption Politics, and State Building from the Bottom Up, 1941-1946," historian Meg Jacobs talks about how the Office of Price Administration helped Americans determine that high standards and low cost of living was their reward, nay birthright, for surviving two World Wars and a Great Depression. Caught between empowered consumers and producers and retailers anxious to throw off the yoke of government regulation, the OPA was at the center of post-war discussions about the future of the American economy. Given today's cost of living problems, I find it fascinating to study the economics of the first half of the 20th century, and how societal reactions and government policies continue to shape today's discussions about the future of our economy - whether people realize it or not. Today, economists are studying the impact of the Great Recession and COVID-19 on our economic future, just like historians and economists in the 1920s and 1940s did when they were looking back at the two World Wars. This week, we go all out total war with Walt Disney. Produced by Disney in 1942, "Food Will Win the War" was a propaganda film of the Agricultural Marketing Administration, under the auspices of the United States Department of Agriculture. Narrated like a newsreel, the cartoon illustrates the might of American agriculture, in brilliant technicolor. The cartoon illustrations of the overwhelming productivity of American agriculture compare mind-boggling production numbers to well-known landmarks and other Very Large Things. Flour to blizzards, bread to the Egyptian pyramids, tomatoes to the Rock of Gibraltar, cheese to the moon, etc. When getting to meat production, we get to see the Disney's Three Little Pigs, leading a parade of hundreds of hogs, playing "Who's Afraid of the Big, Bad Wolf?" on fife and drum. Periodically, we are reminded that the size of several of these items could crush Berlin, including a very plump blonde representing American fat and oil production. One scene compares American agriculture to a giant bowling ball, which is depicted rolling through Nazi headquarters (tattering the Nazi flag in the process), and bowling over pins caricaturing Adolf Hitler, Benito Mussolini, and Emperor Hirohito. The film closes with a grim montage of the challenges faced by shipping and a call to the Four Freedoms outlined by FDR - Freedom of Speech, Freedom of Religion, Freedom from Want, and Freedom from Fear. Like many propaganda films and newsreels from World War II, this one has plenty of bombast, with good and evil portrayed in stark black and white terms (even though the animation is in color). Released to American audiences on July 21, 1942, it had several goals. One was to buoy American confidence in food supplies. There were concerns that the U.S. was shipping too much produce overseas and that there would be shortages at home. These concerns were not unfounded, but wartime production increased enough that even though rationing eventually grew tight, everyone had enough to eat. Another was to impress upon foreign audiences that American production capacity was overwhelming and would strengthen the Allies, who had been at war for over two years already. In 1941, Disney was suffering major financial losses from Fantasia - it was a box office flop and made just a fraction of what it cost to produce. You can see the economy of animation in many of the scenes of this film - where largely still images move across the frame or zoom in or out - achieved by layering cells. But the success of Disney's animated films for the war effort helped keep the studio afloat during the war. They became well-known in particular for training films, as Disney animators were able to illustrate in fine detail mechanical operations and theoretical scenarios that would be difficult or impossible to film in real life. Today's World War Wednesday poster is one of the more whimsical food posters created during World War II. "Lick the Platter Clean, Don't Waste Food" features a tall, thin man and a short, stout woman showing a shining clean brass platter. They are both dressed in old-fashioned, even Medieval-looking clothing, as befitting fairy tale characters. Of course, they are Jack Sprat and his wife, from the famous nursery rhyme: "Jack Sprat could eat no fat, his wife could eat no lean, but between the two of them, they licked the platter clean." The fairytale cartoon style is distinctive to artist Vernon Grant, who is probably best known for creating the original "Snap, Crackle, and Pop" characters for Rice Krispies cereal in 1933. The use of cartoons during the Second World War to promote propaganda ideals was not uncommon, and even Walt Disney and his animators got involved. Like hearkening back to the patriotism of the American Revolution, the use of fairy tales and other common childhood references were a clever way to remind people of pre-existing frames of reference for the behavioral changes the government was requesting of everyone. The message, of course, was a frequent one, although more often directed at soldiers and seamen than ordinary Americans, for whom the focus was more on food storage and cooking than eating. But the idea of not wasting food you took remains even today, when parents exhort their children to clean their plates. Did you grow up with the Jack Sprat rhyme? George Washington Carver is a historical figure you may have heard of. Perhaps you grew up learning in elementary school that he invented peanut butter (he didn't), or perhaps you know his work in popularizing sweet potatoes. You might know he was born into slavery, and through his pioneering efforts at plant science, helped found the agricultural college at the Tuskegee Institute in Alabama.
But the bulk of his accomplishments have been glossed over in popular culture, until now. Grist recently published an excellent overview of the real contributions Carver made, and why they have largely been ignored. George Washington Carver died on January 5, 1943. Just a few months before his death, he published Nature's Garden for Victory and Peace, his contribution to the victory garden conversation during the Second World War.
Many people wrongly attribute Carver's booklet as a guide to victory gardens. In fact, it is a guide to foraging, and in line with Carver's ideas about food sovereignty that were decades ahead of their time.
Carver knew that access to land meant access to food, and even if Black families were denied access to land to grow gardens, they could forage in the wild public spaces or unclaimed verges of roads, edges of fields, etc. Still coming out of the Great Depression in 1941, people were eager to supplement often meager food supplies however they could. Free food was worth the labor to collect and process it. Nature's Garden lays out not only the common and botanical names of many wild-growing and native greens and herbs, some with accompanying line drawings, but also advice for harvesting and processing, recipe suggestions, and advice on drying garden produce for long-term storage - cheaper and easier than canning, which required expensive equipment and jars. Carver also includes references to Indigenous food uses, such as the use of sumac in making "lemonade," and directions for how to make "Lye Hominy," using the nixtamalizing process invented by Indigenous peoples in Mexico to hull corn and make the naturally-occurring niacin in the corn absorbable by the human body. The booklet was given away free - one copy per person. Additional copies could be acquired at the cost of printing. A Simple, Plain, and Appetizing Salad
One of the few recipes Carver actually outlines in Nature's Garden is also one of the first - a recipe for dandelion salad.
It reads: "A simple, plain and appetizing salad made be made thus: 1 pint of finely shredded young dandelion leaves 1 medium sized onion, finely chopped 2 small radishes, finely chopped 1 tablespoon of minced parsley 1 tablespoon of sugar (can be left out) Salt and pepper to taste "Moisten thoroughly with weak vinegar or mayonnaise, mix, place in salad dish and garnish with slices of hard boiled egg and pickled beets. This is only one of the many delicious and appetizing salads that will readily suggest themselves to the resourceful housewife." A modern incarnation might be made with arugula, instead of dandelion leaves, if you are unable to forage your own safely.
Today, other foragers are trying to reclaim foraging for BIPOC communities. Alexis Nikole Nelson, also known as Black Forager, is one of those people. Like Carver, she reminds everyone that foraging has been the purview of BIPOC communities for as long or longer than the white male foragers who often get all the attention these days.

World War II propaganda posters were not only directed at individual Americans - they were also often directed at people involved in wartime work. And while factory workers might be the more popular images shown in books and documentary films, restaurant workers were a vital part of the wartime workforce. This series of posters was designed to encourage good hygiene and sanitation practices in restaurants, not only to conform with health department rules, but also to keep the workforce healthy and able to work. Produced by the U.S. Public Health Service of the Federal Security Agency, this series of six posters still resonates today! They were designed by artist Seymour Nydorf (1914-2001), who designed a number of posters for the Public Health Service. Featuring a blonde waitress in a blue uniform and different white aprons, with her little blue hat when in the front of house, the style of the illustrations is more stylized than strictly true to life, but makes the point all the same. As we are in the midst of a global pandemic, these posters seems particularly apt, especially this first one, exhorting restaurant workers to "Wash your hands often." This one, which encourages workers to "Use a fork - don't be a butterfinger," shows a waitress using a two-tined fork to take butter pats from a container of ice and placing them in little foil containers - much more sanitary than using her fingers. This poster, "Keep these under cover," shows a waitress adding a cup of pudding to a refrigerated case full of slices of pie, an eclair, and a salad - all things with cut edges that should not be exposed to air for fear of bacterial contamination. I'm sure we all hope that all restaurant workers still adhere to this advice! "Handle with care" shows a waitress placing a fork and cup at the place setting. The poster reminds her to "Don't touch rims" of glasses and "Use handles" to place cutlery. This poster, "Wash every piece carefully," shows a waitress washing a sink full of dirty dishes, with a rinse sink and possibly a steam sink, and shelves of clean plates behind her. This is an interesting scene to me because of the mop-like swab she is using to clean the plates, and what appears to be enormous racks of dishes in the sinks that can be lifted out. And finally, poster number six, "Keep these cold," shows our waitress placing a plate of cooked shrimp in the refrigerator with a whole shelf of milk bottles, a bone-in sliced ham, a square of gelatin, cups of pudding, and what appears to be a large dish of potato or macaroni salad. A thermometer indicating that the temperature is below 50 degrees Fahrenheit is prominently located in the foreground. All the advice in these posters still holds true today! Both in restaurants and at home. Except, these days, we'd have to add "wear a mask" to the list. Hearkening back to the Revolutionary War was a common propaganda tactic in both World Wars. In this propaganda poster from World War II, soldiers were exhorted to save food and equipment by reminding them of Valley Forge - the winter cantonment of the Continental forces during the winter of 1777-78 which was famously (or infamously) difficult for the enlisted men, as clothing, housing, and food supplies were all very short. Despite the harsh conditions coming hard on the heels of a season of defeat against the British, General George Washington and Baron von Steuben rallied the men, beginning the formal training that would turn them into an effective force against the world's best military. In the poster image, a soldier with piercing blue eyes sits on a log next to a small campfire, enduring the falling snow. The shoulders of his blue regimental are torn, he has no greatcoat, one knee of his breeches is torn out, the other is patched. He wears a red scarf around his head and neck under his tricorned hat. The barrel of his musket is wrapped in fabric, probably to keep the snow out, and a knife or bayonet is in a sheath at his hip, next to his cartridge box. What appears to be a wooden canteen is around his neck. And on a forked stick he grills a thin piece of something over the fire - I suspect it is meant to be shoe leather, as he holds another piece in his hand, although it could simply be thin cuts of meat. The men famously boiled the leather of their shoes in an attempt to stave off starvation. What food was available was usually just meat and flour - no vegetables, no bread. These stories would have been well-known in the 1940s, part of the American mythology education that passed for history at the time. By comparing the soldiers of the American Revolution to the soldiers of the Second World War, this propaganda poster is reminding the men of the privileges they have in provisioning, and encouraging them to avoid waste, while hearkening back to the stamina and bravery of the men at the time. Other propaganda posters, like these, encouraged troops to conserve food because the folks back home were going without so they could have enough. While the nation today continues to recover from an enormous winter storm, with widespread power outages, it seemed apt to revisit Valley Forge. Today was a chilly VERY blustery day - my styrofoam Halloween headstone actually blew away this morning! Luckily it only blew into the side yard and wasn't too damaged. Long story short, it seemed like the perfect weather for chicken and dumpling soup. Only problem? I'd yet to find a good dumpling recipe. Until I consulted the glorious Ida Bailey Allen and her 1942 Money-Saving Cook Book. Ida Bailey Allen is one of my favorite relatively unknown celebrity cookbook authors. She was PROLIFIC and published over 50 cookbooks in her lifetime, from 1917 to the 1973 Best Loved Recipes of the American People, published the same year she died. A food writer, magazine editor, and essentially the founder of homemaker radio (she was the president of the Radio Homemakers Association), she was also the first female food TV host with her show "Mrs. Allen and the Chef" (you can listen to clip here!). One of the only moving images of Mrs. Allen that seems to survive on the internet is this little clip from the 1940s - a retrospective of the 1920s. Candy in tea! Who knew? Her Money-Saving Cook Book, first published in 1940 was republished in 1942 as a Victory edition, which is the version I have. It's just a delightful cookbook - chock full of basic, easy, and inexpensive recipes, as well as a bunch of 1940s-style vegetable recipes that I can't wait to try out. So when I was on the hunt for a dumpling recipe to go with my chicken soup, this one of the first cookbooks I consulted, and it did not disappoint. First, let's start with the chicken soup. Scratch Chicken Soup1 pound chicken 5 quarts water (or 4 quarts water and 1 quart chicken stock) 1 onion 2-3 ribs celery 1 cup diced carrots 1 cup frozen peas 1 cup frozen corn (or 1 bag mixed frozen corn, peas, and carrots) salt & pepper to taste Soup is always way easier than people think. It's just a matter of adding ingredients at the right time depending on how long they have to cook. Start with the chicken. You can use boneless or bone-in, skin-on. If using boneless, substitute 1 quart of water with chicken stock for extra flavor. In a large stock pot (I used my favorite cast iron dutch oven), add the chicken, water (and/or stock), onion, celery, and carrots (if using fresh). If not using chicken broth (which is salted), add a teaspoon of salt. Bring to a boil and reduce heat to a simmer, cooking until the chicken is cooked-through and the carrots are tender. About 20 minutes. Remove the chicken from the broth, dice, and return to the pot. Add the frozen vegetables and return to a simmer. Once the vegetables are tender, voila - chicken soup. You can now proceed to the dumpling recipe. Ida Bailey Allen's Puffy Drop DumplingsI didn't want to roll out the dumplings, so I used the Drop Dumpling version of the recipe. Here's the original, which turned out pretty well! I did substitute butter for the shortening. If you use salted butter, reduce the salt in the recipe to 1/2 or 3/4 teaspoon. 2 cups all-purpose flour 1 teaspoon salt 1 teaspoons baking powder 1 tablespoon unsalted butter 1 cup whole milk Use a balloon whisk to blend the flour, salt, and baking powder together. Cut the butter into small pieces and squish in the flour with your fingers (or cut in with a pastry blender) - there should be small chunks or streaks of butter left in the floury mixture. Then add 1 cup milk. Mrs. Allen called for a scant cup, but that wasn't quite enough - my mix was dry instead of being soft. Using a regular table or soup spoon, drop bits of dough about the size of a walnut (or a little larger) into the simmering soup. There will be a lot - submerge any exposed parts under the broth to make sure they steam properly. They'll start puffing up/breaking up almost immediately. Cover the pot and simmer for about 5 minutes. The flour from the dumplings will thicken the broth nicely. The dumplings exceeded my expectations - being a cross between that doughy chew you expect from a nice soup dumpling and light and spongy on the inside of the larger ones. Thanks to everyone who participated in this week's Food History Happy Hour! In this episode we made the Ice-Cream Soda-Water from Cooling Cups and Dainty Drinks (1869). As I went through the laborious process of hand-shaving ice from a block, we briefly discussed the history of ice harvesting and the first uses of soda fountains.
We also discussed all things hot dog! Including the history of hot dogs, how they are made, their prevalence at beaches, ball parks, and fairs, regional variations in hot dog toppings, the origin of the corn dog, and the use of hot dogs in American diplomacy, including famously by Franklin D. and Eleanor Roosevelt in Hyde Park when they entertained King George VI and Queen Elizabeth of Great Britain in 1939. In my research for last week's episode into the origins of the root beer float, I found reference in the 1860s to soda fountains and the invention of the ice cream soda that was simply ice and cream and soda water. So it was fun to discover this recipe in the cocktail guide Cooling Cups and Dainty Drinks (1869).
The original recipe doesn't have much direction, but here it is:
Ice-Cream Soda-Water - Equal quantity of fruit syrup and cream; double the same of shaven ice; add bottle of soda water and drink off. Here's my recipe: 1 cup hand-shaven ice (the more the better) 1 ounce raspberry syrup (a 19th century favorite!) 1 ounce heavy cream 6-8 ounces seltzer or club soda Place the ice in a large tumbler and pour syrup and cream over, top with seltzer, stir gently, and drink quickly. "Dog Factory" by Thomas Edison (1904)
A Food Historian friend asked if I was going to "ruin" hot dogs for Food History Happy Hour by discussing how they are made. I didn't make any promises, but thought this Thomas Edison film was fun to watch. In it, dogs are turned into hot dogs, and hot dogs are turned back into dogs. In the background of the "factory" - which closely resembles a hot dog push cart - ropes of sausages hang on the wall labeled by type of dog.
It's a bit gross, but meant to be all in good fun - making a joke (as always) about the origins of the meat used to make hot dogs, something that still occurs today. In the end, more sausages get magically turned into dogs than vice versa. Episode Links
